All about the dish
Machboos is the national food of Bahrain, Qatar and Kuwait. The highlights of this amazing dish are the richly seasoned rice with scrumptious pieces of meat. This delicacy is somewhat similar to Biriyani. The Qataris may also call it ‘Kabsa’. Meats such as camel, chicken, beef, shrimp and goat can be used to prepare Machboos.
Preparing the dish
The time it takes in total to cook this delicious meal is approximately 1 hour and 40 minutes. The meat is fried until it becomes golden brown with a bit of oil on low heat. There is a special spice mixture in which the meat is to be seasoned before frying. The rice is boiled in chicken broth with a few spices added in as well.
The aromatic spices
Baharat is one of the unique Arabian spices used for most Arabian dishes. This is the key ingredient that brings out the flavour in Machboos! This spice mixture can vary from shop to shop, but the typical ingredients would be black pepper, paprika, cumin, coriander, cinnamon, cloves, cardamom and nutmeg.
Where to find Machboos
Since this is the national dish in most middle east countries, you may find the delicacy served at all hotels in Doha Qatar for example, hotels like Souq Waqif Boutique Hotels. You may also find the delicacy in tiny eateries in small towns.
